PRESIDENT/EXECUTIVE CHEF INSTRUCTOR



FRANK P. SCLAFANI, SR., CEC, FMP
is Founder, President/Secretary, and Executive Chef Instructor of Sclafani’s Cooking School, Inc. Chef Sclafani earned a Bachelor of Science Degree in Science from St. Edward’s University, Austin, Texas.   He is grounded in practical experience as President/C.E.O. and Executive Chef of Restaurant Sclafani, Inc.  Restaurant Sclafani had a seating capacity of 500 guests.  In addition, he has 27 years of culinary restaurant management experience and 22 years as president of Sclafani’s Cooking School, Inc.  He is a “Certified Executive Chef” by the American Culinary Federation Educational Institute and Certified “Foodservice Management Professional” by the National Restaurant Association Educational Foundation.  Chef Sclafani has taught approximately 2,000 Commercial Cook/Baker alumni.  He served as a board member of Commercial Bank in Metairie, LA, Area Council of Boy Scouts of America, ACFNO, the Carrollton Rotary Club and others.  Personally, he networks with graduates in placement assistance and career growth enhancement.  Chef Frank hosted his own radio cooking talk show on WTIX.  He interviewed chefs and restaurateurs live on the radio.  Chef Frank P. Sclafani is on the National Restaurant registry to administer the ServSafe course and proctor the exam for certification.

All Sclafani Cooking School Instructors hired are required to be ACF Certified or Certifiable through four or more years of commercial cook or baker full time work experience. The Louisiana State Board of Regents requires verification of instructor’s qualifications to meet their standards.
